It tastes like candy. I’m not kidding. It’s absolutely fantastic. It’s the reason why I look forward to salads. And there’s no fat anywhere in sight. (This is good since I’ve been off them for about three weeks.)
Anyway, all you do is take two or three champagne mangoes, a small handful of frozen (or fresh) strawberries, the juice of half a lemon, a little bit of water, and blend away.
I put it on top of two heads of romaine, tomatoes, peppers, baby bellas, cucumber, corn, and a little bit of onion.
Mix it up, then proceed to do whatever it is you do when you taste something fantastic. (I usually eat it, but sometimes a happy dance is called for.)
